Egg Roll in a Bowl

Egg rolls are usually wrapped in high-carb spring roll pastry then deep-fried. These easy-to-assemble bowls remove the excess carbs, but are still loaded with flavor!
Ingredients
- 1⁄2 medium yellow onion, diced
- 1 clove garlic, crushed
- 1 tbsp coconut oil
- 1 lb (450g) 70% lean ground beef
- 1 tsp salt
- 1 tsp black pepper
- 1⁄2 tsp cayenne pepper
- 4 tbsp butter
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp grated ginger root
- 1⁄2 medium green cabbage, thinly sliced
- 2 medium spring onions, chopped
Instructions
- Place a large frying pan over medium heat. When the pan is hot, add the onions, garlic, and coconut oil. Sauté for 2 minutes or until the onions become translucent.
- Add the ground beef, salt, pepper, and cayenne pepper to the pan. Cook for 8–10 minutes or until the beef is browned.
- Add the butter, soy sauce or coconut aminos, and ginger. Stir continuously until the butter is melted, then add the cabbage. Continue cooking, stirring continuously, until the cabbage is wilted, about 5 minutes. Add the chopped spring onions and stir to combine.
- Divide the mixture evenly into 4 meal prep containers and top each serving with 1⁄2 teaspoon of the sesame seeds.
