Chicken Broccoli Casserole

A simple casserole that will feed you for a couple days and it's super quick and easy to make.

Ingredients

Casserole

  • 8 ounces cream cheese, room temperature
  • 1⁄2 cup sour cream or full fat greek yogurt
  • 2 cups shredded cheese of choice (shred your own cheese for best results)
  • S&P to taste
  • 3 cups(ish) pulled chicken (you can also get a rotisserie chicken and break that down for faster prep)
  • 3 cups(ish) broccoli (I get the big bag of broccoli florets from the produce section since it's easier to prep)

Topping

  • 2 cups shredded cheese of choice (shred your own again)

Instructions

  1. Preheat oven to 350 degrees.
  2. Cut chicken into 1 inch chunks and saute (skip if using rotisserie)
  3. Prep a large bowl with an ice bath (a decent amount of ice and water)
  4. Boil a large pot of water
  5. Once boiling, put broccoli in for 45 seconds, pull, from heat, drain, and put broccoli immediately in ice bath to stop cooking process.
  6. Once broccoli is done, make sure pot is empty and return to stove. Add cheese, cream cheese, and sour cream or yogurt.
  7. Cook over medium low heat until melted.
  8. Once thoroughly combined, add cooked broccoli and chicken to cheese mixture and combine.
  9. Transfer mixture to a 9x13 baking dish and sprinkle with the remaining cheese.
  10. Bake for 15 minutes or until top is golden brown.
