Chicken Broccoli Casserole

A simple casserole that will feed you for a couple days and it's super quick and easy to make.
Ingredients
Casserole
- 8 ounces cream cheese, room temperature
- 1⁄2 cup sour cream or full fat greek yogurt
- 2 cups shredded cheese of choice (shred your own cheese for best results)
- S&P to taste
- 3 cups(ish) pulled chicken (you can also get a rotisserie chicken and break that down for faster prep)
- 3 cups(ish) broccoli (I get the big bag of broccoli florets from the produce section since it's easier to prep)
Topping
- 2 cups shredded cheese of choice (shred your own again)
Instructions
- Preheat oven to 350 degrees.
- Cut chicken into 1 inch chunks and saute (skip if using rotisserie)
- Prep a large bowl with an ice bath (a decent amount of ice and water)
- Boil a large pot of water
- Once boiling, put broccoli in for 45 seconds, pull, from heat, drain, and put broccoli immediately in ice bath to stop cooking process.
- Once broccoli is done, make sure pot is empty and return to stove. Add cheese, cream cheese, and sour cream or yogurt.
- Cook over medium low heat until melted.
- Once thoroughly combined, add cooked broccoli and chicken to cheese mixture and combine.
- Transfer mixture to a 9x13 baking dish and sprinkle with the remaining cheese.
- Bake for 15 minutes or until top is golden brown.
