Cauliflower Mac And Cheese

A solid easy meal that will make enough for dinner a couple nights, or dinner and lunch the next day.
Ingredients
- 1 head cauliflower
- 1 lb. chicken thighs (boneless, skinless)
- 3 tbsp butter
- 2 bags shredded cheddar cheese
- 0.25 cup heavy cream
- 0.25 cup almond milk
Instructions
- Preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with foil or parchment paper.
- Melt 2 tablespoons (28 g) of butter. In a large bowl, toss together the cauliflower florets with the melted butter. Season with sea salt and black pepper.
- Arrange cauliflower on a baking sheet. Roast for about 10-15 minutes, until crisp-tender.
- Turn oven down to 350 degrees.
- Cut chicken into bite-size pieces or strips and cook in air fryer for 10 minutes or until chicken is cooked through.
- Heat the 1 bag cheddar cheese, heavy cream, milk, and remaining tablespoon of butter, stirring frequently. (You can do this on the stove in a double boiler, or in the microwave.) Heat until the cheese mixture is smooth. Be careful not to overheat or burn the cheese.
- Mix cauliflower, chicken, and cheese sauce and put in baking pan and top with cheese.
- Bake for 10 minutes and serve.
