Cauliflower Mac And Cheese

A solid easy meal that will make enough for dinner a couple nights, or dinner and lunch the next day.

Ingredients

  • 1 head cauliflower
  • 1 lb. chicken thighs (boneless, skinless)
  • 3 tbsp butter
  • 2 bags shredded cheddar cheese
  • 0.25 cup heavy cream
  • 0.25 cup almond milk

Instructions

  1. Preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with foil or parchment paper.
  2. Melt 2 tablespoons (28 g) of butter. In a large bowl, toss together the cauliflower florets with the melted butter. Season with sea salt and black pepper.
  3. Arrange cauliflower on a baking sheet. Roast for about 10-15 minutes, until crisp-tender.
  4. Turn oven down to 350 degrees.
  5. Cut chicken into bite-size pieces or strips and cook in air fryer for 10 minutes or until chicken is cooked through.
  6. Heat the 1 bag cheddar cheese, heavy cream, milk, and remaining tablespoon of butter, stirring frequently. (You can do this on the stove in a double boiler, or in the microwave.) Heat until the cheese mixture is smooth. Be careful not to overheat or burn the cheese.
  7. Mix cauliflower, chicken, and cheese sauce and put in baking pan and top with cheese.
  8. Bake for 10 minutes and serve.
